When will my order ship?
All of our coffee is roasted to order because we want the coffee you drink to be as fresh as possible. We ship orders the day after the coffee is roasted. Currently our roasting day is Tuesday, so orders placed before Tuesday morning will ship on Wednesday of that week.
Why do you prefer dark roast?
We prefer dark roasted coffee for many reasons. Darker roasts inherently have less acidity than lighter roasted coffee, so we find it easier on the stomach and much smoother to drink. Nailing the perfect dark roast is similar in theory to caramelizing an onion. There is a perfect sweet spot that we always try to achieve in our roasting that brings out the smoothest, sweetest, caramelized flavors in the beans. When we say dark roast we aren’t referring to charred or burnt, just perfectly dark.
Which coffee variety do you recommend?
This is a tough question, because personal tastes are so subjective. What I think tastes amazing might not be your cup of joe. Generally I answer this question by asking what you tend to like. If you prefer a fuller bodied, “strong” cup of coffee I would suggest Sumatra, or one of our African varieties. If you tend to like milder coffees, or want something a little more fruity or acidic, or lighter bodied I would suggest a central or south American variety. In essence, they are all good in their own way and I personally find it difficult to pick a favorite. (But it’s totally Congo.)
Are your coffees organic and fair trade?
Yes. While not all are necessarily “certified organic” our coffees are all shade grown at high altitudes and mostly by small family owned farms. Pesticides cost a lot of money, so does the sticker of certification saying “organic”. Often this is something that isn't attainable for these smaller family owned operations, despite growing their coffees well within the parameters of qualifications for certification. Our supplier builds relationships directly with these individuals and pay them a fair price for their coffees directly.
